Imagine if you could find a restaurant that mixes Chinese, Russian and Turkish cuisine — this is exactly what’s waiting for you at Bostan Uyghur. Situated in an unassuming tiny strip mall is owner Mirzat Salam’s flavorful restaurant. He speaks with pride when explaining the noodles are “hand pulled” each morning. Mirzat is also the chef and explains how his parents had a restaurant back home. When he came to the US, Mirzat didn’t speak English. So he found work in a similar cuisine restaurant in Fairfax. From there, he decided to create his own business settling in Arlington.

As he explains what Uyghur cuisine is (from the northwest Xianjiang region of China), he stresses the use of the wok. It’s used in preparing many dishes such as lagmen. This is a very traditional meal — stir fry meat and vegetables topped with hand pulled noodles. The rice dishes are an aromatic bed of jasmine rice and the bowls arrive piping hot and full of spices drowned in their own sauce. One woman had traveled 40 minutes just to have the kababs, which are marinated for 24 hours. Everything is full of flavor, such as the goshnan, which is like a pizza folded over and filled with ground beef, onion, black pepper and cumin.

Situated along Langston Boulevard, Bostan Uyghur is easy to visit. Many of the seven employees use the bus to get to work. ART 55 , 56 and Metrobus 3Y serve this location with routes to Rosslyn and East Falls Church. Of the customers Mirzat sees walk through the door, are young Chinese patrons. One Turkish gentleman said he was there for the kabab, the best he’s tried in this region. Having been featured in the Washington Post four times and once in the NY Times, it’s one of the most unique cuisines, which gives it its appeal. One last recommendation? Try the red tea, a caffeinated, cardamom and rose petal infused that gives it a nice aroma.
